With half the amount of sweetener compared to its 70% dark little cousin, this 85% dark chocolate features the beloved complexity of our Ecuadorian-origin cacao.

As the name suggests, we have been known to munch on this bar during those little in-between moments we might best sum up by the term "midnight", though the precise time on the clock is irrelevant. In fact, maybe that's what best summarizes the circumstances we recommend for indulging in this bar: a receptivity to timelessness, to the expansiveness of the precise moment where and when you munch – inclusive of any cravings or desires or feelings we may prefer to flee or flag for followup.

Instead, consider if this piece of chocolate, as it melts, might represent a world you too can inhabit.

What colors, then, would your gaze reveal?

Organic Ecuadorian cacao, organic unrefined cane sugar.

Made in a fully vegan, gluten-free facility powered by 100% renewable wind energy.

EcoCacao, a cacao cooperative in Ecuador's Esmeraldas region, is dedicated to conserving and revitalizing the Punta Galera forest, Ecuador's last significant coastal humid tropical forest. Since 2005, EcoCacao and other UOPROCAE members have collaborated with various NGOs on environmental and cacao-related initiatives, focusing on regenerative agriculture.

This innovative farming approach aims to restore rainforest within cacao farms, contrasting with traditional deforestation practices. However, explicit funding for this project ceased in 2016, highlighting the need for sustainable pricing to support the ongoing training, management, and auditing of regenerative practices. In response, Uncommon Cacao and Endorfin have partnered to offer regenerative premiums, ensuring the project's continuation.

To maintain optimal cacao varieties, EcoCacao identifies and marks the best-performing trees on their farms. Seeds from these trees are used to grow saplings for planting in other areas, helping to preserve genetics well-suited to the local microclimate. This practice is particularly crucial as climate change significantly impacts cacao cultivation in the region.
