Aged six months, this bar packs a brightly layered, fruit-forward flavor unique to the fine-quality cacao directly sourced from a women-led farmer cooperative in Haiti. Even at 57% dark, we keep each nibble light and creamy thanks to unmistakable addition of coconut milk and unrefined coconut palm sugar.
By FDA standards, milk chocolate needs only 10% "cocoa solids" – a processed derivative blended from often unknown, mixed origins. The 90% of what's left? Typically sugar, emulsifiers, artificial or "natural" flavors. . . We're taught to associate "milk" with sweet, "dark" with bitter.
We'd rather go back to basics. Four ingredients, slowly unfolding to more than the sum of their nuts.

Zorzal is the namesake for Zorzal Reserve in the Dominican Republic, where we proudly source the beans that go into this very bar.
With a focus on habitat restoration and climate change mitigation, Zorzal Reserve is a private reserve and bird sanctuary of over 1,000 acres, with 70% of the land dedicated as the "forever wild" winter home to Bicknell's Thrush – zorzal in Spanish – a highly threatened songbird who spends summers in upstate NY.
The remaining 30% of the land is home to some of the world's most sustainably-produced and delicious organic cacao, which helps to fund the reserve's conservation efforts. We pay a premium, well over fair trade minimums, so that each farmer and producer receives a truly fair pay to sustain their labor and livelihood.
